Night Mode is a new feature available in Super Mario Maker 2. (Night Mode is not available in the Super Mario 3D World build mode.) Night Mode allows for even greater variety in course-building because it can affect mechanics and enemy behavior.
To unlock Night Mode, simply add the Angry Sun to a level you’re making, press and hold the Sun to reveal more options, and select the Moon instead. After taking this simple step, you can change a level to Night Mode by adding a Moon to your level, or by choosing Night Mode in the left menu bar, where you also change a level’s theme.
